This recipe by Jennifer Olson was featured in the Simply Real Food column by Lori Jury
Mexican Wontons
1 pkg wontons-place in cupcake tins for 8-10 minutes at 350 degrees to form a little cup. (Watch so tips do not burn)
Combine:
1 pkg. hot sausage
1 pkg. regular sausage (fry drain and crumble sausage)
1 red pepper, chopped and seeds removed, can also use green pepper to have holiday colors
Red pepper flakes (if desired)
1 cup shredded mozzarella cheese
1 cup shredded cheddar cheese
8 oz. ranch dressing
Place in baked wontons and bake for 10 minutes at 350 degrees.
Make approx 4 dozen. |

[b]SPINACH BALLS
2 packages chopped, frozen spinach - drained well
2 cups Pepperidge Farm dressing (crumb version)
1 onion, finely chopped
6 eggs - beaten
3/4 cup parmesean cheese
1/2 tsp thyme
2 tsp. pepper
(Calls for salt but I leave it out - enough seasoning from the dressing)
Mix all ingredients - squeeze liquid out of spinach. Form into small balls, and freeze on a greased cookie sheet. When frozen, place in ziplock bags and take out when needed.
Bake from frozen state on a cookie sheet - at least 20 minutes....the balls should be firm and slightly brown.
